How It StartedWe arrived in Nicaragua with only a few kilos of chocolate; when that supply ran out after a couple of months, the situation became desperate. We are indebted to John Nanci of chocolatealchemy.com who has taught so many the art of making chocolate on a small scale. Years of experimentation and tasting led to Chocolate Ocelotl and taste-bud satisfaction.

Why Ocelotl?Ocelotl is the Nahuatl word for the ocelot or dwarf leopard, a stunningly beautiful cat roaming the forests of Nicaragua and Central America. We take care of a young female ocelot “Aisha” and have trained her to cope in the wild. She is so playful and 'necia' and a delight. She also demanded to be the face of the operation. Below is her photo story.
